The day shone brightly on our Fall walk while delicious pea soup simmered at home, stirred by Mom. Cindy and I put in all the ingredients for a great hot lunch. We do love cooking and serving and planning more fun menus. Wishing for apple dumplings next.
Cindy’s Pea Soup Recipe
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
2 cloves garlic, minced
Saute in olive oil and 2 T butter for 6 – 8 minutes.
Add
4 cups chicken broth or stock
4 cups water
1 teaspoon Marjoram
1 lb. dried split green peas, rinsed and checked
6 oz. cooked chopped ham (optional)
1 cup unpeeled chopped potato (optional)
Bring to boil. Simmer 1 1/2 hours. Skim off foam while cooking, and stir occasionally.
Use hand held blender to puree. Can put directly in pot, but keep immersed. Turn off before removing.
